Avocado Tomatillo Salsa Verde

This is the sauce to end all sauces. It’s everything you love about guacamole, but without the high cost, extra calories, or risk of oxidative browning. The addition of tomatillos, makes things leaner and less expensive, and keeps it bright green even after a few days in the fridge. I use this as a salad dressing for a Cali-Mex style Cobb salad, as a topping for tacos, as a lean dip for crudités, or as a sauce for Chile Rellenos. It keeps well for 3-5 days in the fridge, so don’t be afraid to prep ahead.

Avocado Tomatillo Salsa Verde Recipe

  • 1 avocado
  • 4-5 tomatillos, husk and stem removed and roughly chopped
  • 1/4 bunch cilantro (stems included)
  • 1 jalapeño, seeds removed
  • juice of 1 lime
  • 1 clove of garlic
  • Salt to taste
  1. Using a blender or food processor, thoroughly mix all ingredients until smooth, stopping to scrape and stir as needed.
  2. Use immediately or cover and refrigerate.

*Can be made up to 5 days ahead and stored in the fridge. I highly recommend making a large batch to enjoy throughout the week as a dressing, dip, or sauce accompaniment to salads, gran bowls, tacos, etc.
