Making traditional cannoli from scratch is anything BUT fun. Skip the technical steps of making the dough, and instead opt for store-bought wonton skins. When lightly sprayed with oil, they bake up just as crisp in the Air-Fryer as any deep-fried cannoli you’ll find in Little Italy.
Tip: You’ll need cannoli metal molds to give the wonton wrappers the proper cannoli shape

Vegetable oil spray
6 Wonton wrappers, cut into 4-inch circles using a biscuit cutter
Ricotta Filling:
1 cup ricotta cheese
¼ cup powdered sugar, plus more for final dusting
1 teaspoon vanilla bean paste
Pinch of salt
¼ cup sprinkles

1. Spray the Air Fryer basket with vegetable oil spray.
2. Spray both sides of wonton wrapers with vegetable oil spray and wrap around cannoli molds. Place seam side down so that the wontons stay wrapped.
3. Bake at 350 for 5 minutes. Remove molds and bake an additional 3-5 minutes until lightly browned and crisp.
4. Cool completely.
5. For Filling: Mix ricotta, sugar, vanilla, and salt until smooth.
6. To assemble: Transfer Ricotta Filling to a piping bag or Ziploc bag. Snip the end and fill cooled cannoli. Dip edges in sprinkles to stick to the ricotta filling and dust with powdered sugar. Serve immediately or store in the fridge for up to 1 day.
